Abstract:
The present investigation was planned out to throw light on thebacteriological condition of freshly slaughtered rabbits and publichealth importance of isolated organisms as well as, suggested hygienicmeasures should be adopted.A total of 50 carcases of freshly slaughtered rabbit wererandomly collected from different retail outlets at Cairo Governorateand transferred without undue delay to the laboratory where they weresubjected to bacteriological examinations.The average aerobic plate count / gm of rabbit carcases were29xl06 ± 7xl06 organisms /gm.Concerning the Psychrotrophs the mean count waslxl06±0.4xl06 organisms / gmMean counts of Enterobacteriaceae and Coliform organismswere; 12xl04±3xl04 and 8xl04±lxl04 organisms/ gm of rabbitcarcases respectively.Staphylococcus aureus were existed in most of examined rabbitcarcases with an average of 5xl04 ± lxl04 organisms / gm.
