Bacteriological Aspects of Marketed Crabs At Dakahlia Governorate

Abstract:
A total of 50 raw crab samples were randomly collectedfrom differnt retail outlets of different sanitation levels at Da-kahlea Governorate and transferred without under delay tothe laboratory where they were subjected to bacteriologicalexamination .The obtained result revealed that the mean values of Aero-bic plate counts, Psychrotrophic count, Enterobactriaceaecount, Coliform count, total Enerococci count and Staphylo-coccus aureus count/gm., of examined crab samples were 29x 106 + 7 x 106 8 x 105 + 2 x 105 4 x 1 04 + 1 x 1 04 16 x- , - , - ,102 +4 x 102 15 x 103 +5 x 103 and 8 x 103 + 1.4 x 103 re-- ’- -spectivelyEco1i type I ( typical ), Enterobacter aerogenes , Entero-bacter agglumerans, Enterobacter cloacae, Citrobacter freun-dii, Klebs . ed.vnr edwardsii, Klebs.pnumoniae. Klbs. aero-genes, Proteus vulgaris, Proteus rnorganii, Proteus mirabilisand Pseudomonas aurginosa could be isolated from examinedcrab samples at a varying percentages ranging from 40/0 to46% .The public health importance of existing organisms aswell as suggetive measures to improve the keeping qualityand sanitary conditions to insure a maximum safety to crabsare glven .
