Bacteriological studies on meat and meat products with special reference to salmonella and shigella serotypes

Abstract:
A total of 100 random samples of different meat products werecollected from two different districts in Alexandria city; one of lowstandard level of hygiene and other of high standard (50 samples of each).Accurately, 50 samples of raw frozen meat, minced meat, beefburger,sausage and luncheon (10 of each) were collected from different retailstores and supermarkets located in each district and subjected tobacteriological examination to evaluate their quality and the conditionsunder which the products were manufactured.The obtained results revealed that the mean values of APC ofdifferent meat products produced at low and high levels of hygiene were1.13xI06±0.42xI06& 1.s.xHf±0.76xI05/g for frozen meat, 3.24xI06± 1.07x106& 7.4lxI05± 1.74x105/g for minced meat, 1.91x106± 0.7IxI06&8.93xI05± 2.80xI05/g for beef burger, 3.09 x106± 0.98 xl06 &1.67xI06 ±0.66xI06/g for sausage and 1.87x106± 0.77x106 & 1.06x106± 0.48xI06/g forluncheon, respectively.Concerning the total Enterobactericeae count, the mean values ofexamined samples of frozen meat, minced meat,beefburger, sausage andluncheon produced at low level of hygiene were 1.56xl03 ± 0.52xl03,3.79x103 ± 1.21xl03, 2.54x103 ± 0.94xl03,2.94xl03 ± 1.02xl03 and1.93xl03 ± 0.65xI03/g, respectively. While, the mean values of total line’ (C6) as well as several different tissues from rat. In Northern blotanalysis, the PrP cDNA probe hydridized to a single approximate 2.8 kbmRNA band under stringent conditions, indicating that PrP gene wasexpressed in these neuronal cell lines (HV3-3 and HVI6-3) as well as in ratbrain. In this conditions, Northern blot analysis did not show PrP mRNAin C6 cell line, spleen, and liver from rat. The present results indicated thatPrP gene was expressed in these neuronal cell lines (HV3-3 and HVI6-3)as well as in rat brain.
