Staphylococcus Aureus As A potential food poisoner In Broiler processing plants

Abstract:
A total of 595 random samples including (swabs, muscles andskin) were taken from seventy broiler carcasses, via differentprocessing stages and finished product, collected from two processingplants of different levels of hygienes mainly plant I (automaticsystem) and plant II (manual or prmitive system).All samples were subjected to bacteriological examination. Theobtained results revealed the followingIsolation and count of S. aureus from processing stagesand finished product:1- The incidence of S.aureus isolated from swabs of vent and skinflap of neck taken from plant I was (34.28%), (51.42%), and(51.42%), (57.14%), from live birds and slaughtered chicken,respectively.2- The incidence of Siaureus isolated from swabs of vent and skinflap of neck taken from plant II was (40%), (57.14%) and(51.42%), (62.85%) from live birds and slaughtered chicken,respectively.3- The incidence of S.aureus isolated from processing stages ofplant I which constituted (S.A. De±), (S.A.W.) and (S.A.Ch)was (62.85%), (62.85%) and (68.57%), respectively.4- The incidence of Siaureus isolated from processing stages of plant H which constituted (S.A. Dei) and (S.A.W) was(68.57%) in both, the chilling stage was not envolved inplant H.
