Mycological studies on Milk and some Milk Products

Abstract:
Two hundred and fifity random samples of raw milk Cl 00 samplesrepresented as 25each of bulk and can milk samples and 50 market milk),~oghurt and Domiati cheese samples (50 each) were collected from dairyfarms, dairy shops and groceries in Great Cairo province as well as 50amples of animal feedstuffs (25 each of machine- milking farms andhand- milking farms) were also procured from the dairy farms. Collectedamples were subjected to mycological investigation.The mycological examination revealed that 32%, 68%, 80%, 38%and 56% of examined samples of can, bulk and market raw milk as wellas) Yoghurt and Domiati cheese samples proved to be contaminated withyeasts and molds .The mean values were l.5xl03± l.3xl03 ,3.9 x 104± l.9 x 104,2.7xl06± l.2xl06, 6.3xl04±3.lxl04 and 2.8xl05± l.4xl05, respectively.Molds of genera Penicillium,Aspergillus,Altemaria, Cladosporium,~1ucor and Fusarium could be isoalated from examined samples of rawmilk) yoghurt and Domiati chees at varying percentages (2 % to 36 %),while, yeasts as Candida albicans, Candid tropicalis and Rhodotorula~pecies could be isolated from raw milk, yoghurt and Domiati cheese atpercentage ranged from 4 to 36 % .Aflatoxin M, could be detected in 16% and 10% of examined canand market raw milk samples respectively with average values of36.75 and 34 ng/L. respectively.
