Abstract:
One hundred and fifty individual samples of sheep and goat milk were examined in this work for determinationof their major oonstituents. The samples were collected during the green and dry seasomfrom three different sheep breeds; Osimi, Rahmani and Sharkawi; as well as from Baladigoats in Sharkeia Governorate •The specific gravity of sheep milk ranged from 1.03501 to 1.0402 , with a mean value of 1.0375 ± 0.00031,1.03766 ± 0.00035 and 1.03756 ± 0.00033 for Osimi, Rahmani and Sharkawi breeds during the green se2son, while in dryseason it varied from 1.03510 to 1.0404, with a mean value of 1.03~8 ± 0.00033, 1.03745 ± 0,00028 and 1.03734 ± 0.00033 respectively.The minimum specific gravity of goat milk during the green season was 1.02798, the maximUlil was 1803526, with a mean value of 1~03ioOl + 0.000297~ while it varied from1.02762 to 1.03562 during the dry sGason, with a mean v~lue of 1.03135 ± 0.000403 .
