Studies on the Sanitary Condition of Some Nile Fishes in Zagazig Markets

Abstract:
Twenty five random samples eaeh of ”Clarias lazera”and ”Bagrus bayad” were collected troin Zagazig marketsand transferred to the laboratory with the minimum ofdeJA,. where they. were subjected to keeping q,:”l9,litytests as well as to bacteriological examination.The physical exemination revealed that examinedsamples were fresh (68-93 degrees).The volatile basic nitrogen content in the musclesof both samples ranged from 11.2 to 16.8 mg. nitrogen/100 g. The surface total colony count was comparetivelyhigher than that of the muscles in all examined fishes •• Mesophiles predominate as higher counts were obtainedat 25°0 incubation.• Organoleptic examination, manifested by chemic~l analysis& con!ir.med by bacteriological examination proved thatexamined” fishes can be considered f~esh.
