Abstract:
One hundred random samples (twenty five each of mehallabia,rice pudding, flavoured ice-cream and fruit yoghurt) were collectedfrom different localities in Zagazig City, and examinedmicrobiologically.The mean total colony count/g. in mehallabia samples was7.7 x 105, in rice pudding was 2.1 x 105, in flavoured ice-cream was4.1 x 105 and in fruit yoghurt was 1.4 x 104.The mean thermoduric count/g. in mehallabia samples was 6.1 x102, in rice pudding was 7.7 x 102, in flavoured ice-cream was 1.2 x 104. :and in fruit yoghurt was 7.1 x 102.The mean coliform counts/g. in mehallabia samples, rice puddingand flavoured ice-cream were 3.9 x 102, 66 and 1.1 x 103 respectively.E. coli was present in 12%, 20% and 4% of mehallabia, ricepudding and flavoured ice-cream samples respectively.Klebsiella pneumoniae, Kl. oxytoca, Enterobacter cloacae andEnterobacter aerogenes could be isolated from 12%, 56%, 32% and 52%of mehallabia samples; 56%, 28%, 28% and 16% of rice pudding samplesand 16%, 16%, 12% and 0 of flavoured ice-cream samples respectively.Enterobacter agglomerans could be isolated from 28% of mehallabia
