Sanitary quality of yoghurt

Abstract:
One hundred random samples of plain and fruit yoghurt (fifty each)collected from dairyshops in Zagazig city were examined in this work forsanitary quality.Coliform organisms proved to be present in (76%), (64%) of examinedplain and fruit yoghurt. .Coliform count using MPN/g ranged from 9.0x1 02-9.3x1 08 and1.5x103 - 3.9xl 07 in plain and fruit yoghurt with a mean value of 2.3x1 07/gand 1.3x107/g with highest frequency distribution (73.7%) lies between 102- 105 and (78.1 %) lies among 105 -108 in examined plain and fruit yoghurtsamples, respectively.Out of 48 isolated coliform orgarusm in plain yoghurt Citrobacterfreundii found to be the predominating organisms comprising 16% followedby Citrobacter diversus, Enterobacter intermedium, Enterobacter coloacae,Klebsiella oxytoca, Klebsiella pneumoniae, Citrobacter amalonaticus,Enterobacter agglomerans, Enterobacter freundii and Enterobacteraerogenes In a percentage of 12%, 10%, 10%, 8%, 8%, 4%, 4%, 2% and 2%respectively.Out of 40 isolated coliform orgarusm in fruit yoghurt, the mostcommonly isolated spp. was Citrobacter freundii 16% while the minor spp.were Enterobacter coloacae, Enterobacter intermedium and Klebsiellapneumoniae (each 6%). Other spp. were recovered as Klebsiella oxytoca,
