Abstract:
One hundred and £i£ty random samples of hardcheese, cooking butter and sweetened condensed milk(50 sample. each ) collected from different localitiesin Cairo and Giza were examined mycologically to deter-mine the count and incidence o£ existing Fungi.The mycological study reveals that yeasts wereFound to be present in 88% • 94% and 14% o£ examinedhard cheese • cooking butter and condensed milk samplesrespective~y • with a mean counts of 41.08 x 107 ~ 5.279x 10 /s» 251.46 x 10 .~ 16.665 x 10 /m.and 17.14 +1.66/m~. respective~y.Mou~ds were detected in 90% • 84~ andexamined samples of hard cheese, cooking butter and con-densed milk respectively.
