Summary:- 75 samples of frozen hBlliburfer were collected atrando~, from restaurants of variable sanitation leveland three meat factories at different district inCairo •and Giza, and examined physically, chemicallyand bacteriologically for determi.nin£ their quality•I ) Physical examination :The colour of examined hamburger samples variedfrom purple to grey and the demonating colour (70.7 %)was that ranging betweon purple to bright red.Spicy an~ fleshy odour were the ~ost emitingodour and noted in l5C.7 %)and l30.7 ~) of samplesrespectively.Normal trxture was felt in l76 %) of samples.On examinatiori under Qu&rt~ lamp. all sampleswere found to contain variable amounts of connectivetissue,while Cysticercus bovis failed detection inthis study.
