Abstract:
A sum of 100 random milk samples were collected from Iterent sources including street vendors, dairy shops,and dairy farms, in Behera province, Each Sample was :Uc:llly and baoter1otogioaliy examined. nf,n oroer to etmine its sanitary ebtlditlol1’The chemical examination of street vendors milk samples ealed that ’the mean values of specific gravity, fat %, T.S.%f .F~%J and t~tratable acidity % were 1~02? .t O!0034, 4.5 .± ,JJ6, lO!96 .! O!5l28, 6.5 .± 0.3098 and 0.!16 .± 0.0164, pectively.!Corresponding values for milk from dairy shops were 032.t O.!0045. 5.5 .± 0.1224, 13.74.± 0~1013, 8.2.± 0.0747 and While in case of dairy farm samples, these ~ + 0.0095. -’ues were 1.036 + 0.012l, 7.5 + 0.0877. 16.35 + 0.1897, , -. -. .’,-.± 0.1158, and 0.20 .± 0.0114 for buffaloe’s milk, and,031.:t O!0014, 3.8.± 0.2.302, 10.68 .± O!2l91, 6.9.± 0.2135, d O!14 .± 0.~00.30 for COWlS milk, respectively!The results obtained for fat, total solids and solids- t-fat revealed the presence of both types of adultrationnartial skimming and addition of water in most. samples of reet vendors, and cow’s milk from dairy farm samples ofmilk from dairy farms were in good agreement with
