Abstract:
One hundred and eight local (54 fresh and 54 salt-water) fish samples representing Bolty, Bouriand Teeban Egyptian species were studiesw Samples were analysed to determined certqin orgqnic and inorganic constituents beside its caloric value. Data obtained were statistically analysed andreprese~ted in 37 Tables and 19 Graphs revealing :- MOISTURE:(1) It attained its highest value in Bolty(79.09, 79.54~) and its lowest in Teeban (59.51I, 56.91~) grams%.(2) There was no significant difference between fresh and salt-water fish.(3) A negative correlation between moisture and fat content was found in the three species(4) Bolt~,E* o~ly showed significant negative correlation between moisture and protein contents.
