Incidence and public health imporiance of coliforms with special reference to enteropathogenic serotypes of escherichia coli in milk and some dairy products

Abstract:
Two hundred random samples of raw milk fresh kariesh cheese and yoghurt collected from dif- localities in Cairo and Giza were examined bac-teriologically for detection, isolation and identifi- cation of coliforms and serological typing of existingAll examined samples of raw milk proved to be contaminated with coliform organisms. The maximumcoliform content (MPN/100 ml) of examined samples was92 x 109, The m.i.n Lmum was 130, 3wi th a mean value of 148.28 x 108 + 110.62 x 108• Coliforms were present in 96% of examined cream S~ples, the maximum MPN/l00 ml was 16 X 1014,the mini-3 12 m~ was 33 x 10 , with a mean value of 164.43 x 10 + 12 67.01 xExamination of kariesh cheese revealed detection of coliform organisms in 82% of the examined samples. The maximum MPN/l00 g was 16 x 1010, the minimum was 1) x 102, with a mean value of 16.392 x 109+ 9.590xl09•Only 10 out of 50 samples of yoghurt were found to be contaminated with coliforms, with a count (MPN/1QOg)
