Abstract:
One hundred random samples of market milk collectedfrom different localities in Zagazig and its suburbs wereexamined in this work for detection of their sanitary con-dition.All samples showed strong positive results forGuaiac test, and thus proved to be raw.The results of the keeping quality tests revealedthat 18% of samples were precepitated with alcohol, whileone sample was clotted on boiling. The mean acidity per-cent was 0.174 + 0.003 with a minimum of 0.090 and a maxi-mum of 0.234.The bacteriological examination revealed that thetotal colony count/ml. milk ranged from 36 x 105 to 70 x1’) . l2 r 1210 ~, Wlth a mean value of 37.66 x 10- + 1.250 x 10 •The mean to~al enterococci count /ml. milk was50.4 x 104 + 7.98 x 104• The differential counts are re-corded.Coliforms were present in all examined samples atvarying counts (MPN/ml) ranging from 23 x 103 to 24 x 1013,with a mean value of 27.51 x lOll + 2~439 x lOll.
