Abstract:
One handred and five random samples of ice-cream small were collected equaily from large scale producers, scale producers -and street vendors in Zagazig citymethlene blue reduction test showed a reduction0 time (0) in 40 samples\38.19%). In 29 samples (27.62%)Methylene blue reduction test showed a reduction ,the reduction time ranged from 0.5 to 2 hours, while in 22samples (20.95%), the time varied from 2.5 to 4 hours andin h .”moles (13-)3”’•’, ”it .•eduction time was over 4 hours.The total colony count /ml-. ranged from 164 x 10 to 294xl09,with a mean value of 115.44 x 108 ~ 45.87 x 108•Enterococci could be isolated from 64.76% of exa-mined samples, their count ranged from 10 to 24 x 104 withe mean value of 56.62 x 102 ~ 24.37 x 102• Strept. faecalis existed in the product at variablecounts in 85.71% of examined samples. The minimum count/ml.waS 10, the maximum waS 15 x 105 with a mean value of 16.68 x 104 ± 1.64 x 104•While strept. faecium was present in 40% of examinedsamples.
