Abstract:
Sixty samples of pasteurized mi1k, collected from the local distrj_Duting centers in different localitiesin Cairo and Giza, were used in this work for chemical and bacteriological studies.The chemical analysis of examined samples revealed a maximum fat content of 3.2%, a minimum of 3.00% with amean value of 3.0383 t 0.0079.The solids not fat percentages ranged from 8.90 to 9.85 with a mean value of 9.29133 ~ 0.03195.The mean titratable acidity in examined samples was 0.13238 :!:. 0.0011 with 0.160 as a maxi.mum and 0.117 as aminimum.The results of chemical examination concerning fat and solids not fat percentages in examined samples complywith the legal requirements according t o. Egyptian Acts and Regulations for pasteurized milk.Neither pho sph at ase nor peroxidase enzymes cou Ld be dete ct ed in any of the examined samples.
