Abstract:
Fifty random samples of market milk~aw and pasteu-rized0 collected from different localities in Cairo andGiza, were used in this work for bacteriological studies.All samples of market raw nri Lk showed s trr ong positiveGuaiac test results and thus proved to be raw~ While nei-ther pho sphat e s e nor peroxidase enzyme could be det e cne din any of the examined pasteur~zed.milk samples •.All examined samples of market raw milk proved to be contaminated with coliform organisms at ti.tres rangingfrom 10-4 - 10-11 (average 10-7•04).While coliforms vies:« present in 20 % of examined sam- p Le s of pasteurized milk, as they could be .dete’ct~d in1 ml. in 4 % of samples, in 0.1 ml in 12 % of samples an~in 0.01 ml in 4 % of samples.Faecal ccliforms (B.culi) could be detected in 36 % of market raw milk while it could not be isolated fromexamined pas•teurized milk;: samples.Enterobacter serogenes, Enterobacter cloa-cae, Ente:rro-bacter li~uefacienB, citrobacter f~eundii, Klebsielia
