Abstract:
Fifty random samples of milk collected from street vendors and shopkeepers in different localities in Caironnd its suburbs, were used in this work for chemiqul and bacteriological studies~All aamp’Lc s showed s t r ong posi tive reaction to Guaiac test thus proving to be raw.The results of chemical examination revealed that 56% of examined samples proved to be adulterated by skimming and/or addition of water. While 4% of samples contained formalin.36% of samples were precipitated with a Lc oho L, while 3 samples were clotted on boiling.The bacteriological study revealed that the total colony count/ml •. milk ranged from 120 x 107 to 38 x 1014, with a mean value of 198.912 x 1012 ±. 90 •. 900 x 1012 •.Coliforms were present in all examined samples at varying titres ranging from 10-4 to 10-14t.’ with a mean value of 10-6•46 ± 0.355. The ~ighest frequency distribution (48%) was in therange 10-4 to 10-6 •.The high colony count and coliform content, is indica-tive of the neglected sanitary measures ’under which the milk had been produced and handled •.
