Abstract:
Samples from edible offals were taken fromhealthy animals slaughtered at Cairo abattoirs.One hundred eighty (180) edible offals were col-lected including brain, kidney, liver, lung, spleenand testicles fordeter:nining the chemical consti tuen tsof each.Sixty (60) samples were taken from each species,cattle, sheep and camel.Age and sex of each animal were reported.Each sample was subjected to the followingproximate chemical analysis: estimation of moisture,protein, fat and ash.The results obtained were tabulated and statis-tically calculated using the 3- way analyses of var-iance according to Winer (1970).The highest water content was found in the tes-ticles of young cattle 87.02% while the lowest valuewaS in the liver of adult camels 72.39%.The moisture content of meat organs varied sig-nificantly according to species and organs, while agehas no effect regarding the moisture content.
