Abstract:
A total of 100 random fresh liver samples of cattle andcmnel (50 of each) were collected from Menoufia abattoirsand subjected to a bacteriological and mycologicalexamination to evaluate their quality.The results of bacteriological examination indicatedthat the mean values of Aerobic plate count (APC) ofexamined liver samples of cattle and camel were 5.26 x 105 +1.31 X 105 /g and 1.19 x 105 +0.23 x 105/g, respectively.However, the mean values of total Entrobacteriaceae count,total coliform count, total Lactobacilli count and total Staph.aureus count were 4.28 x 104 +0.71 X 104, 1.33 X 104 +0.29X 104, 6.49 X 103 +1.04 X 103 and 2.05 x 104 +0.44 X 104 +0.38 X 104, 5.86 X 103 +0.73 X 103,6.22 X 103 +1.52 X 103and 2.24 x 103 +0.62 x 103 /g for examined camel liversamples, respectively.Differences associated with APC, Enterobacteriaceaecount, coliform count and Staph. aureus count of examinedliver samples of cattle and camel were significant (P < 0.05)while the differences between such samples as a result ofLactobacilli count were not significant.
