The present work consist of two parts dealing with important topics in the fruit juice industry. The first part deal with a serious problem that threatens the safety of apples and apple products, namely, the contamination with the mycotoxin patulin . Animal tests showed that patulin has a wide spectrum of activity and act as carcinogenic mutagenic and teratogenic agent.
