Damiati cheese is the most famous cheese in egypt and middle east most of the consumers preferit. inspite of the numerous research for the improvement of such kind of cheese. effect of kind of milk. heat treatment applied to cheese milk. the presence of starter and the concentration of salt on physical and chemical, properties of cheese. this study is divided into three main parts.
