Abstract:
In Egypt, the population of this sector who aged between 6 and 14 years of age became significantly appreciable and reached approximately seventeen millions (l1NICFV 19S0). With the prevailing circumstances, particularly in the rural areas within developing countries like ours, it seems to be impossible to isolate malnutrition from other consequences of poverty.The primary school children in such areas might be one of the most suffering vulnerable groups who should receive more attention and care particularly in health and nutritional requirements ,These children would not grow into healthy adults if they are malnourished or inadequately nourished during this critical stage of physical and mental development. Bread is considered as one of the fundamental staple foods for many countries especially the developing ones. It is well known that in these developing countries bread represents about 72% of the total calories values and about 70% of the total protein intake. In fact, bread constitutes more than 50% of the daily food consumed by Egyptians and the percentage grows up to 90% of the food consumed by the working class. Biscuit is considered a popular food studied for children especially in weaning stage, as well as for adult There is no doubt that biscuits arc essentially ”ready 10 cal” II.HHI It call be used also ill pm ticular cases such as emergency rations and in fortified foods which can be supplemented with protein. In Egypt, biscuits manufacture is one of the major food industries, it’s demand is continuously increasing from year to year . This investigation was designed to process and evaluate a special enriched bread and biscuits as a balanced diet for the children (6-14 years).
