Abstract:
Recently, interest has been centered on the possible of iron in the presence of ascorbic acid, The latter aids the absorption of iron not by maintaining it in the reduced state .but by shifting the redox balance within the absorptive- epithelium in the direction of reduction which in some unexplained manner results in an increased absorption.The work presented in this thesis is a contribution to the study, of the problem of stability and bio availability of two practically important substances namely iron and ascorbic acid .The study appears in two partsPART I - STABILITY OP FERROUS SALTS AND ASCORBIC ACIDShe following are the main items investigated ,this part ;Chapter 1 – Effect of Some Additives on the Stability of Ascorbic AcidIn this chapter the stability of ascorbic acid is aqueous solution was carried out by spectral techniques after exposure to daylight with and without different additives represented by glycine, glucose, levulone, iron and a blend of glycine and iron, The stability . studies were carried out by measuring the absorbance of these solutions after exposure to daylight for various periods of time
