Prottern in contain twenty common amino acids ( alanine, arginine, aspargine, aspartic acid, cysteine, glutamine, glutamic asid, glycine, proline, serine, tyrosine, histidine, isoleucine, leucine, lysine, methionine , phenylananine threonine, tryptophan and valine ) in addition,some food proteins contained hydroxyproline and hydroxylysine. All twenty amino acids were needed for protein synthesized in the human body, and were referred to as indispensable or essential smino asids 1these essential amino acids which include histidine, tryptophan and valine must be supplied in the diet. Dietary requirements for protein and amino asids were based on needs for both total amino nitrogen and essential amino asids to synthesize body protein and other important nitrogen containing compounds such as peptide hormones and neurotransmitters1.Therefore, the availability of reliable methods for amino acid analysis of foods, feces and plasma became important for the precise prediction of protein quality of foods and protein nutritional status of humans.
