White soft cheeses (Tallaga) were made by using of fresh skim milk and 4% sunflower oil, soybean oil or canola oil, with the addition of different emulsifiers e.g. 1% Whey Protein Concentrate (WPC), 0.1% Distilled Mono Glyceride (DMG) or 0.
